　引起头发变白的原因有很多，但摄取主食和肉蛋白量少导致的营养不良，是非常重要的因素。

　　古人说，“发为血之余”，意思是说头发的生长与脱落、润泽与枯槁，主要依赖于肾脏精气之充衰，以及肝脏血液的濡养。不吃或少吃米谷等主食，必然会伤脾胃，而且还会伤及肝肾。人在青壮年时，肝的气血充盈，所以头发长得快且光泽，而到了年老体衰时则精血多虚弱，其直接原因是脾胃提供的营养不足所造成的。五谷杂粮中富含淀粉、糖类、蛋白质、各种维生素和某些微量元素(如铜)等，以及肉食中含有的丰富肉蛋白。中老年人如果主食及肉食摄取不足，常会导致头发变灰变白。
